Does testing ice cream flavors sound like a dream come true? The Food Science and Technology Department’s sensory evaluation lab can be used by students, faculty and outside clients.
Located in Parker Hall, the lab offers consumer testing, discrimination testing, shelf life testing, product development testing, focus group research and customized quality control.
Students measure consumer products including food, beverages and personal care items for the perception of taste, smell, pungency, touch and appearance. Emotional responses to food and flavor are gathered, as well as data on preference, likability, acceptability and purchase intent. The lab is equipped with testing booths, computers for online data collection, and a prep room with various appliances.
